Ingredients

  • Sweet Potato (boiled and cut into pieces)
  • Onion – 1 (chopped)
  • Garlic – 3 cloves (chopped)
  • Dried Red Chilies – 3
  • Mustard Seeds – 1 tsp
  • Urad Dal – 1 tbsp
  • Curry Leaves – 1 sprig
  • Paprika Powder – 1 tsp
  • Curry Powder – 1 tbsp
  • Cumin Powder – 1 tsp
  • Salt – to taste
  • Oil – as needed
  • Water – a little (for cooking)


How to Make Sweet Potato Varuval

  1. Boil the Sweet Potatoes
    Cook the sweet potatoes until soft. Peel and cut into bite-sized pieces.
  2. Prepare the Tempering
    Heat oil in a pan. Add mustard seeds and let them splutter. Add urad dal and fry until slightly golden.
  3. Sauté Aromatics
    Add chopped onion and garlic. Sauté until fragrant. Then add curry leaves and dried red chilies.
  4. Add Sweet Potatoes
    Add the boiled sweet potato pieces and gently mix.
  5. Add Spices
    Add paprika powder, curry powder, cumin powder, salt, and a little water. Mix well.
  6. Cook & Serve
    Sauté until the spices coat the potatoes nicely and the dish turns slightly dry (varuval style). Serve hot!

Don’t overcook – Sweet potatoes should be soft but not mushy
Adjust spice level – Add more dried chilies for extra heat
Crispy version – Cook a little longer for slightly crispy edges
Healthy twist – Use less oil for a lighter version
