For Boiling the Chicken

  • 1 whole chicken
  • 2 celery sticks
  • 1 tbsp crushed ginger & garlic
  • Salt

🍗 For Chicken Marinade & Black Sauce

  • 1 tbsp crushed ginger & garlic
  • 2 tbsp oyster sauce
  • 1 tbsp sweet soy sauce
  • 1 tbsp salted soy sauce
  • ½ tbsp dark soy sauce
  • ½ tbsp sugar
  • Salt

🍚 For Fragrant Chicken Rice

  • Rice
  • Butter
  • 1 tbsp crushed ginger & garlic
  • Pandan leaves
  • Chicken stock (from boiled chicken)
  • Salt

🌶️ For Spicy Chili Sauce

  • 6 red chilies
  • 4 bird’s eye chilies (cili padi)
  • 1 tbsp crushed ginger & garlic
  • A little sugar
  • Salt
  • Chicken stock


Cooking Method (Simple Overview)

  1. Boil the Chicken
    Cook the whole chicken with celery, ginger, garlic, and salt until tender. Reserve the flavorful chicken stock, this is the heart of your dish!
  2. Prepare the Rice
    Sauté ginger and garlic in butter, add rice, pandan leaves, and cook using the rich chicken stock for maximum flavor.
  3. Marinate the Chicken
